I have a lot of trouble making friends, I seem to be able to get along well with people I work with but can never get the relationship to the friend stage or further if I'm interested.

But I have managed to get 7-8 people to agree to go to an activity in a few weeks. Obviously these are all people I get along with. What's the best way of asking for these people's numbers? I can't do it in front of everyone so should I email them a few days later and tell them I had a good time and would like to hang out again?

Before you go to your activity ask for their numbers and let them know you will call them a few hours before just to make sure they will be going.

You could e-mail them, or ask for their numbers individually.
