I have several times in my life taken a year or two off. I traveled, lived on boats, bummed around the islands, freelanced is whatever came along.

I have recently taken the last 6 years off of work, to stay at home with my daughter. I have worked odd jobs and such, and it has not come with out its financial difficulties... but it has totally been worth it!!!!!!

I'd travel, see friends around the world, make new ones, arm myself with new experiences. I'm kind of in the middle of doing that now.

I would rent a place by the beach, preferably in hawaii and swim or lie on the beach everyday...maybe learn how to surf, eat delicious food, relax and have a good time.
