Treo 700p It's very stable and will take both stills and video, plus audio note taking. It meets 100% of your stated needs.

I am in the same business, and currently use the Motorola Q. I have been through several other PDA's but I found this one to be the best for me. I had the Treo 650, which always froze on me. I also had the Samsung i730 which was a great phone, but call quality was horrible. So now I am using the Motorola Q. No problems so far. The one thing you want to keep in mind in regards to these PDA's, most MLS's will not be able to display using your internet broswer, and if they do display, there are many missing functions. They all open PDF files, so that should help. The Q has everything you are asking for, bluetooth, internet, email, a camera (dont expect to make flyers with the pictures you take from any cell phone camera), and has the basic office tools (pocket excel, pocket word) The one thing is with the Q you can view these files, but you cannot edit them. Hope this helps.

Your best bet would probably be a Palm Treo, not sure if it has a camera though.

Others to consider would be Blackberries or the Motorola Q.
