The Donkey was supposedly used by Andrew Jackson as a symbol in his 1828 campaign, though this story may be apocryphal.
Both representations are generally attributed to 19th century political cartoonist Thomas Nast, who used the animals to represent the parties in his comics.

Well, political cartoonists needed to symbolize the parties somhow, so one cartoonists chose to represent the Dems with a donkey, and republicans with an elephant. I'm not sure why, though.
