How about a travel book on Greece. Or maybe a greek phrase book. Also, a camera would be great. Or a good book for the flight.

A good travel guide like Michelin's together with a dictionary or a phrase book like Berlitz...
A nice bathing suit, high protection factor sun tan lotion, after sun lotion, sun glasses...
Some good books about the antiquities....
Or you can buy him a good cellular phone with Greek roaming.
Or pack some of the traveler's favourite food, not available in Greece (although I find it a bit hard, because there is everything in the Super Markets)
p.s. If the traveler comes to Greece during winter, drop the idea of the swimming gear...

Basically you can find everything in Greece. Maybe you can buy them a box of their favorite snack which possibly cannot find here. It's not that your friend is going to miss any basic stuff in Greece.
And don't forget a lot of condoms :) Greeks do it better :):):):):)
