I'm watching XMen 3 right now. When did Jean die? Will it be explained in this movie, or was it XMen II?

Jean hasn't completely died and yes she "supposedly" drowned in X2 and in X3 she is "Phoenix" the other half of her brain, but she is not COMPLETELY dead. There is talk of another X-Men 4 and even if they don't make that in the comic world she is never completely dead! Just dormant.

Jean Grey in the comics and animated series has two stages of evolution: After dying in the second movie, Jean Grey will be brought back to life in her Dark Phoenix evolution stage. After dying in the third movie, the demise of Jean Grey paves the way for Jean Grey's last evolution stage, which is the Phoenix. The Phoenix should not be confused with the Dark Phoenix, because the Dark Phoenix is evil, while the Phoenix is simply the opposite. Like aforementioned by a previous person, the Phoenix is a fictional character that disintegrates into ashes upon dying, but will magically return to life from the very same ashes to give life to a renewed and more magnificent magical bird.

jean did not die in X2
she dies in X3 when wolverine sticks her in the stomach
right at the end

Jean actaully died twice. The first time was in X-Men II, there she drowned. Then she came back and died in X-Men III when Woverine stabbed her.

She died at the end of X-Men 2. You'll see what happens to her in X-Men 3.
