You can uninstall it but you are going to be required by Microsoft to get it very soon. IE6 is being done away with and Microsoft will force IE7 on everyone via their updates utility.
If you still want to delete it:
Start > Settings > Control Panel > Add/Remove Programs
At the top of the window check the box to Show All Updates
Let the "updates" list load and then find IE7 and uninstall it.
It will revert to IE6 however temporarily.

Go to start then control panel and go to add/remove the new Internet Explorer and it take you back to the old one Internet 6 ok have to restart and it back to normal

Download the setup files for version 6, then go to Add REMOVE programs, take explorer out, reboot, run the 6 setup

Just uninstall 7.0. It will automatically revert back to the previous installation. To uninstall 7.0 go to Start --> Settings --> Control Panel --> Add & Remove Programs. Find Internet Explorer 7.0 in the list and uninstall.
