My husband's best friend is coming a very long way just to spend the week of thanksgiving with us. I am a very good cook and have everything figured out other then the turkey. How do you cook it? I am having a 12 pounder.

There will be directions on the bag. Cook the turkey at the recommended temperature and minutes per pound. Don't cook it on too low a temperature or you risk food poisoning! You can buy a meat thermometer and insert it into the thickest part of the breast. Many turkeys come with a pop out thermometer, but I don't really trust that too much.
Thaw the turkey for several days at the bottom of the refrigerator if it is purchased frozen. Don't leave it out to thaw. Wash the turkey thoroughly and don't forget to remove the organs which are usually placed in the body cavity around the neck area. Drain the turkey and pat it dry. Use a light coating of cooking oil on the skin to help browning. You might want to use an oven bag to avoid basting. Reynolds bags are pretty good. Follow the package directions. Use a rack to keep the bottom of the turkey from being soggy. If you are stuffing the turkey be sure to leave room for expansion of the stuffing and remove the stuffing before refrigerating any unused portions. Refrigerate the turkey an hour after serving.

Turkeys are actually pretty easy. Make sure you have a roasting pan that fits the turkey. Thaw it out several days in advance. Pull out all the giblets and wash out the inside. If you plan to stuff it-don't overstuff.
Cooking in a Turkey bag is the best. You can get them in the plastic bag, cooking bag area of the store-they are called turkey bags. They make the turkey sooo moist. Follow those instructions and you should be good!

Relax...this isn't as bad as u think. First suggestion, follow package directions for cooking time/temperature. Second, rinse your bird well with cold water inside & out, then pat dry with paper towel. Make sure you have a roasting pan that fits your bird (I use disposable, way less clean up). Also, use a roasting bag (Reynolds). You don't have to worry about basting the turkey that way. Season & if u like stuff with favorite stuffing recipe. Butter or oil the top of your bird for a nice golden brown skin before putting it into the roasting bag. Use a meat thermometer to make sure your bird is cooked completely.
