A good project for me might be a terrible one for you, because you might not be the least bit interested in my topic.
The best advice I can offer you is to choose a topic that interests you - one that you would be enthusiastic about and motivated to study more. Is this project simply a research paper, or do you need to put it on display in a science fair, or both? If you have it on display, you certainly want to choose something that catches other people's attention and is interesting to them.
Science is a HUGE subject - it includes everything from the human body to volcanos to plants. Surely you can think of something that interests you. Maybe you can browse through your science book and pick something from your favorite chapter.
As far as how to DO the project, we can't help you with that. Your teacher is the person to ask. He/she is the one grading you, not us, so you want to do it THEIR way, not ours, to get the best grade.

in 6th grade, i did a project on distilling (a.k.a. purifying) salt water to clear water. what you do is some salt water up to boil and try to catch the steam in a cup. the steam will eventually vaporize into clear water.
i recently did one (i'm in 8th grade fyi) about burning nuts, like an almond, peanut, and a walnut. the point of this was to find out which nut contained the most potential (stored) energy in it.
i also recently did one about distilling water again.

well i'm in highschool and that wasn't too long ago but i remember sixth grade i did a volcano seventh grade i made a rollercoaster model..but that was kind of for math...and eighth i did plenty like having to do with friction making a car and showing examples of it...i hope i helped a bit =)

I did one on how much meteors effected different types of material (sand, soil, silt, etc...) and I got first place for that in 7th grade so theres an idea... I guess....
