Just cook them the day before...you don't have to freeze them.

I don't recall ever freezing sweet potatoes, which is odd as my mother freezes anything. It should be alright, but then again, preparing them a few days ahead of time and sticking them in the fridge would work too.

I wouldn't freeze sweet potato it will lose it's flavor, just do them 2-3 ahead and you'll be fine.

You can freeze anything you want and reheat it in Thanksgiving day. Whether or not it will be edible is another matter.

Casseroles typically are good bets for freezing. Phillips said the components of a dish determine whether it will fare well in the freezer.
