I often hear people selling papers exclaiming "West End Final", I understand it may be the last edition for the day, but what does West End Final mean, and are there other editions.

As I understand it, West End will refer to the West End area of London, and Final refers, as you correctly said, to the final edition of the day. Newspapers may have a number of issues, either relating to the time of day or area covered. I suppose the idea is that readers know that they are buying the latest edition, but quite often that will have been printed a number of hours before.
