Joni B. you have no idea how I am laughing right now. Last Thanksgiving I had my husband in the kitchen helping me. I made him stick his hand up the turkey to pull all of that stuff out. He is such a nut. He was saying all this sexual stuff to the turkey and then he had the turkey looking like it was standing up...all you could see was turkey, then his elbow, anyways, he had that turkey dancing and singing....it was Hilarius.
Maybe it's one of those "You had to be there" stories.

To answer your question...I do enjoy the turkey neck, it's one of my favorite memories.....thank you.

I like to boil the neck with the heart and the gibblets. The liver I don't like, but the rest of that stuff is really good. Course I'm sure it's not for everyone.

Well my om always uses the meat of the turkey neck (boiled down) to start her gravy. It will give a deep flavor to the gravy for your potatoes and stuffing!!!

Good stuff for stock. Boil away and get all the goodies from it. Condenses the flavors for gravy. Yummmmy.

Roast it in the oven along with the other "innerds", use the juice to make gravy. Tie the stuff up in cheesecloth if you find the thought of eating any bits of that stuff gross.
