First expand the brackets, collect like terms and simplify.

(-2x^2 + 5x - 1) - (3x^2 - 4x - 6)
= -2x^2 + 5x - 1 - 3x^2 + 4x + 6
= (-2 - 3)x^2 + (5 + 4)x + (-1 + 6)
= -5x^2 + 9x + 5
