Steven Spileberg - Jaws, Close Encounters, Indiana Jones
Peter Jackson - Meet the Feebles, Dead Alive, The Frighteners, The Lord of the RIngs Trilogy, King Kong
There are many better directors, particularly of classic and independent films (Orson Welles, Hitchcock, David Lynch, and Stanley Kubrick come to mind), but these are the three that, in my opinion, make the films that are the most fun to watch and include the most unforgetable imagery.
