I expect to be greeted promptly and politely (regardless of my appearance or age - a fine restaurant should train its staff to treat everyone with courtesy!). I would also expect for someone to offer to take my coat or at least have a coat room available. I would then expect to be escorted to my table - or to the lounge/bar area to wait for a table to become available. Many restaurants will not seat a party unless most or all of the party has arrived, so the lounge area may also be used for this purpose.
Beyond the initial greeting, I expect all staff members to be professional and knowledgeable, courteous and prompt. The environment should be impeccably clean, attractively decorated, and not too loud. And, of course, the food and drink must be well above average if I'm going to be spending the money to eat there!

Actually, I'm sure you'll find the aroma in the entry is a bad idea. Odor tends to linger,and it tells me that they skimp on air filtration equipment. Where else are they skimping? Besides, I have NO sense of smell. Lost that in an accident 27 years ago. But I did used to consider that. First thing. Now I ask my partner.

I expect prompt staff noticing I am there and ready to seat me. I expect a table ready and that doesn't have to be cleaned off first. Staff are ready to gather drinks for the table and give us a chance to look at the menu, give us a few minutes and return to check to see if we are ready to order. A staff that will check and refill drinks as they see fit as well as other things such as bread, butter, salad.

i expect nothing when it is the first time i enter a restaurant,but at least i want to have a good meal,for it's prize.,and if possible a good kitchen/cook,so i will remind it,that it was good,and come back later again..:-)
but anyway if with fancy you mean that i have to pay more..,you will not see me. :-)
