I am looking for the total of all foodservice establishments licensed to operate in the US.

I'd wager there are a countless number of restaurants. Think of all of the major chains and family-owned businesses. Those major chains have many individual stores too. However, you may want to do an Internet search on licensed food services.

I would start this search by seeing how many licensed food service establishments there are by state. Each one has to be licensed abd approved by the state department of health and is subject to inspections by the dept of health at any time.
Start with Alabama and go alphabetically. This might take some time, but I would think this would be the most accurate method.
