If I understand your garble of worlds correctly this is my answer.
I think that Europe (by which I mean the EU for the sake of clarity) calls for human rights because it is the right thing to to do. They may not always implement everything that they preach but the will is there. Perhaps it has something to do with the vestigial memory of the 2 huge wars that tore the continent apart in living memory.

Humans are humans and have rights no matter what they do, say or believe. I am glad that in Europe we still believe this.

Just to note that Hitler was no fan of the catholics either.

define 'europe'? Do you seriously mean to make such a broad generalisation as to include a large number of people spread out over several cultures?

That second part of your questions isn't even a question, just a bunch of words thrown together. But for the first part: every human should be afforded basic human rights. Each human should also be held accountable for their actions. Should Hitler have been captured alive in Europe, he would probably have been executed for gross crimes against humanity.

They call for human rights out of fear...fear that the terrorists will target them if they don't appease them...Also, they tend to hope to do business with muslim states as well as purchase oil at good prices, so they don't want to offend any state by saying too much of the truth about the whole situation.
the catholic and hitler part of your question makes no sense...in most of Europe, it is illegal to show or possess any Nazi regalia. Or to promote or glorify any thing to do with Nazism.
