Not enough info. Do you mean "How do I assign an application to open a file type?" If so, you select one of the files that fits the type you want to change and choose "Get Info" from the File menu at the top. Then click on the arrow next to "Open with". That will allow you to click on the drop list and select one of the suggested applications or choose "Other" and then you can select whatever you like. After that, you can click on the "Change All..." button and reply to the cautioning question.

In fact, sometimes this process doesn't really change all files of that type to open with the preferred application but it is the correct way to make the request. Also, sometimes the application will be assigned correctly but the custom icon will not change. Weird stuff happens.
