You are correct, humans would fall only into the animals, of all those taxonomic groupings you have listed.

Human beings are animals. Insects and crustaceans are also animals, however they are in different taxanomic categories within animals than humans are. Insects and crustaceans are in the Phylum Arthropoda, and humans are in the Phylum Chordata. But all are in the Kingdom Animalia. Plants are a separate Kingdom altogether, Plantae.

As others have stated, yes, we are animals. We're certainly not insects, crustaceans, or plants. :)
