My littlest one is one and a half and is a champion eater! Here are some ideas, hope this helps!

Breakfast: french toast sticks, pancakes, waffles, bagel with cream cheese, oatmeal, yogurt, dry cereal (chex, cheerios, life) muffins, sausage, bacon, scrambled eggs (you can top them with a little cheese) cottage cheese and applesauce

Lunch: grilled cheese, soup (i heat it up so it's just barely hot and then add lots of ice cubes. if your daughter can drink through a straw try that or you can feed it to her with a spoon) cold cuts (turkey, ham, salami) cheese sticks, cubes or slices, fresh veggies cut into bite size pieces (bell peppers, cooked carrots, snap peas, green beans, broccoli) she LOVES dipping her veggies in ranch dressing or hummus...although hummus makes her have stinky breath! hot dogs (cut length wise into sticks)

Dinner: Chicken, Mac and Cheese, Noodles with butter and Parmesan, cheese quesadillas, bratwurst, fish sticks, meatballs, pizza, pot pie, meatloaf, ravioli, hamburgers, veggies (peas, edamame, cauliflower, squash, mashed potatoes) lasagna

Snacks: fresh fruit (bananas, blueberries, strawberries, raspberries, melon, kiwi, pear) my daughter loves dipping her cut up fruit in some plain yogurt!, crackers, goldfish, Popsicles (big hit!)

I've found that anything that my husband and I are going to eat is fair game for our youngest as long as it is cut into bite size pieces and she is able to serve herself!

Since she is 1 year old and not picky your choices are unlimited. If you are eating healthy and nutritionally just feed her what you are eating. But, some suggestions: breakfast - Cheerios with bananas, toast with grapes cut into 1/4's, pancakes or waffles with applesauce, scrambled eggs with cheese and fried potatoes; lunch - grilled cheese sandwich, home-made macaroni and cheese, turkey hot dog (slice thin and then cut each slice into 1/4's), toasted bagel with a thin layer of peanut butter, include 2 servings of veggies such as steamed carrots, green peas, green beans, corn, or steamed broccoli; dinner - meatloaf/mashed potatoes/1-2 veggies, baked chicken/brown rice/veggies, stew, spaghetti/veggies; snacks - string cheese, yogurt, fresh fruit such as strawberries, melon pieces, kiwi fruit, apple pieces or canned pears, peaches or mandarin oranges with graham crackers, goldfish crackers, vegetable soup with only a little broth, oyster crackers, baked sweet potato cooled and cut into small pieces. Give her whole milk at meal times and water in between. Try to avoid juice or stick with 8 ounces or less per day.

My advice is to keep doing what you are doing. She'll probably get tired of the same thing and move on, but for now, if it works and is nutritious, run with it!
