First the restaurant would be exceptionally clean. We would be greeted immediatley upon entering and made to feel welcome and at home. Our server would be friendly and knowledgable. I think if the service is great and the food is even just so-so people will come back for the atmosphere hoping for an outstanding meal!

Something upbeat and fun in the daytime and quiet and peaceful at night.
Classical music playing through the Bose Speakers all around, WiFi for my laptop.
I would want it to be both a great 5 star restaurant and also be that excellent coffee house on the corner.
I would want great efficient service with a smile.

In Rome, we once had dinner at a restaurant that served a tasting portion of each dish that was ordered at our table to everyone. So everyone got a full portion of what he ordered and a tasting portion of what everyone else had. This is a great way to discover new dishes and decide what you might want to order next time. Besides, if you don't publicize that this is what you do, it's always a great (wonderful) surprise. Think about it!

It would have a down to earth pleasant atmosphere, friendly and clean. It would offer a varity of food to choose from so it would appeal to everyones taste buds. If I had kids I would like for it to be kid friendly maybe divided by a wall where one side is for people who have children and the other is not that way the people without children do not have to deal with children who are upset or screaming and they can enjoy their dinner.

Depends: is it gonna be a fast food, a family place or what? You probably should split the restaurant in two: a bar and a dining room.
Everyone loves a buffet, I suggest a soup/salad bar and a place where you can toast your own bread.
Good luck! It must be so interesting working in that business ;)

I love great restaurants. A very pricey one I love is in NYC. It's Jon George. The service is beyond imagination.
One step down in price might be Il Courtile in NYC. An Italian restaurant with northern food, great service.
Overall, Good food and great service makes me go back.
In what city will your place be?

My Favorite restaurant is a bit of a drive from here, but soooooooooo worth it.The decor inside is very rustic, large tables with chairs and benches, full bar,SMOKING.Outside there is seating in the garden with a pond and swans. The best part is the food. You can eat typical German fare but they are known for their steak on a stone. My fav is the Kangaroo steak.MMMMMMMMMMMMMMMMMMMMMMMMM.

Lots of vegetarian options. Veggie burgers, veggie pasta, pizza, sandwiches, and hummus. Who doesn't love hummus? And good beer from small independent breweries.
