What software or website can you use to extract text from a PDF that is just a scanned book (can't copy/paste)

Acrobat uses an OCR to allow text selection which will work well if the scan is of good quality. You just need to download the free reader at http://www.adobe.com/products/acrobat/readstep2.html

you can use acrobat reader proffesional full ver to edit

or

use pdf2word or pdf editor, if your pdf files were scanned using OCR, the text can be copied and paste, but for something like a scanned ducuments will be convert it into a jpg (or picture files in words document)

unfortunately, those aren't free software
