Because football, when played properly and in the manner intended, is inded a beautiful thing to watch. Just watch a match from Arsenal's title winning season of 2001-2002 and you'll understand. ;-)
It probably arised from the 70s, when the Dutch invented Total Football. They placed the emphasis not just on winning, but winning by playing nice, fast-flowing football. It was pass here, pass there, shoot, score. They often ripped opponents apart using that method, and it captivated many fans.
