It acts as a lubricant and it carries the waste away down the drain. Don't even think about the old wives tale of putting IN broken glass to sharpen the blades, it doesn't work and can be dangerous, they can't be sharpened anyway but, some ice cubes can help the smell.

It's a no brainer, the water washes the garbage down the drain so you dont get all clogged up. Commercial disposals automatically run the water if the disposer is on.

The only thing the water helps with is carrying away the ground up garbage down the smaller drain to the bigger main drain. It is really helpful to have water running before, during, and after the disposal running. It helps avoid a plugged drain!

I really think this is an "Urban legend"...A garbage disposal motor is quite capable of running without being water-cooled....but of course "EVERYBODY" knows you must run water.
