"Carol of the Bells" as an instrumental is my favorite Christmas song.
When I was in 6th grade, we played a game in music class. We divided into two groups, and the teacher played the first note of a Christmas carol on the piano. The first person in the first group tried to guess which song. If they couldn't, she played the first two notes, and the first person in the second group tried to guess. This continued until someone got it right. Of course, no one ever got it on the first note. When it was my turn, it was a first note. She played it, I thought for a few seconds, then said "Here We Come A-Wassailing." I was right -- and I don't think I've ever sung the song. There's a less popular song for you.

"Little Drummer Boy" and "Noel" are my two traditional favorites, with "Merry Frickin' Christmas" by Reliant K coming up close behind.
I know most popular bands, whether its pop or country or anything else, usually come out with their own songs for the holidays along with remaking some of the classics. She-Daisy has some really good ones. Don't really know any titles, though.
Oh... and my sister wanted to say that her favorite Christmas song is from Larry the Cable Guy: "On the first day of Christmas, my true love gave to me... Clap. And I left her." hehe
