In Medieval Total War, after you've wiped out a faction, can you recruit their soliders or not? I've not yet tried this, but have considered experimenting with that idea, or are you just allowed to use the soldiers for your faction and the mercenaries that turn up randomly throughout the game?

You certainly could not in Medieval, I don't think you can in Medieval 2 either. The mercenaries are specific to region so if you conquor Denmark you can hire hurlscarls and if you conquor Hungary you can hire Slavic troops.
