Stock rotation is the practise, used in retail and especially in food stores such as supermarkets, of moving products with an earlier sell-by date to the front of a shelf, so they get picked up and sold first, and of moving products with a later sell-by date to the back.
If a product is still on shelves after its sell by date, it will have to be thrown away (recorded as wastage), which is both costly and wasteful to the store (suppliers must be paid even if stock is not sold). Therefore, it is imperative that sell by dates are strictly adhered to, and that products which will perish earlier be sold as quickly as possible.
Since catering establishments must practice this adherence to perishable dates in the food service industry, it is importance to do the same at home. While in the food industry, there is a number of policies governing the safety of food served, even in how it is cooked, homes can follow the same precautions to avoid illnesses within the family.

Stock rotation does not solve the problem of expired products.
When you shop, always look at the expiration dates of diary products and especially eggs. Butter and margarine, deli meat etc. all have expiration dates, if you find a store sells dairy that is expired, inform the manager and you may want to choose another store to shop.
The importance of safe food hygiene in the home and catering establishments, restaurants, is vital, it can cause lives if the food is contaminated by improper handling. Always rinse your meat and after cutting meat on a cutting board, scrub the board with hot water and antibacterial cleaner. Don't ever use a knife you cut meat with again before cleaning it very well with hot water and antibacterial dish soap.

1. So you don't open a can of beans from 1967, which expired in 1992, and get sick in 2006.
2. Safe food hygiene is important because if you serve contaminated food to anyone..they could become ill, or worse yet, dead. In the event that you don't practice it in you own home, you too could become one or both of the above.
