1) To sell the old stock first. You don't want it to get out dated, expire, go stale, or even they change the product slightly.

2) Food hygiene is important as mishandling food will cause all kinds of different food poisoning. Catering especially, when you can be serving to a lot more people, and if they get sick it will cause lawsuits and bad press that can be the end of your business. The law where I live is you need to have a food handling course called FoodSafe to work or run any such business. You don't have to have any training that actually says you know how to cook, like a chef. Just that you know hygiene.
