inspectors generally require a 34" door for bed and bath
standard sizes are 18,24,30,32,34,36" be sure to allow room for framing materials ( 6" ) and 2 1/2" for rough opening, for French doors you can double any of the door sizes. for closet bi-fold; any of the above sizes and also 48", 60", 72", and 84".
roof windows standard widths 16" and 24" X 48"
most tub/showers 32x60"
toilet, allow 32" wide
lots of sinks most common 18" or 22" allow a 24" cabinet
washers and dryers I would allow at leased 72" unless you have specific units
standard ranges are 30"
allow 36" for large fridge.

most plans are drawn so 1/4" = 1'

There is no standard demensions you can draw them on plans not to scale. There are tons of companys that make these items all come in differedt sizes. Plans are usuall drawn with the product already selected by the customer. Then the plans are drawn around the demensions that the customer has selected.
