how can i remove album artwork from itunes?

Well , you are right , you can't remove the artwork from the whole Album at once. you can do it for songs one by one.
Right click on a song and choose "Get info" . then in Artwork Tab ,click on the current artwork(photo) , then the DELETE key will appear.

you can remove album artwork from iTunes just go to "view" and click on "hide artwork"

Delete, and then update your iPod.
