Look it is very simple. They even allude to it early on in the series.

Wolverine's BONES are coated in adamantium. Not his LIGAMENTS or TENDONS. Ligaments are what connects bone to bone, and tendons are what connects bone to muscle. This means that his bones are unbreakable but not his muscles, which suggests he could be ripped apart, as long as his bones weren't crushed.

Hulk pulls him apart, and that puts strain on his ligament and tendons, not his bones. Early on in the series Wolvie is talking to one of the scientists who asks him if his ligaments are also coated in adamantium. I might not agree with what happened but it seems plausible.

Hulk ripped Wolvie in half just like you'd rip apart a cooked chicken leg, without breaking the bones. The joints come apart. The admamantium can stay right where it is, in the bones. Try regenerating from THAT, Logan!

Remember, that the Ultimates is a different universe from the original 616 Marvel universe.

So rules change there. Maybe ultimates Hulk is quite more strong than 616 Hulk and adamantium is weaker in ultimates, too.

If you don't like it, don't read ultimates and just read the original universe titles, that's what I do.
