What would be the best degree to have (undergrad) when trying to get an editorial job at a large publishing company? If one has an undergrad degree in a non-English/journalism field, would an MA in English be necessary in order to have any chance of getting hired? Thanks!

A degree is always helpful...especially in English. A command of the English language can lead to many professions...as well as giving you proper tools to always be understood. For journalism, just add a couple of writing courses to introduce you to style and concept. Also...with a vivid imagination you can become a writer or novelist.
