What is the best way to clean and condition leather car seats?

Go find a tack shop (horse supplies), pick up some saddle soap to keep them clean, and see what they recommend to keep them conditioned. Probably some sort of leather oil. DO NOT USE ARMOR ALL, that **** is the worst thing for leather and vinyl.

I like the Ar-moral leather cleaner. Give it a clean with a damp towel then apply the Ar-moral spray. If the leather is clean before you apply it, it will condition the leather better.
