While associated with battle, Athena was not a deity of hunting. That would be Artemis.
Athena is the goddess of wisdom, war, the arts, industry, justice and skill. (according to pantheon.org) but I've always heard wisdom first and foremost. I would assume then she is very thoughtful and patient. As some other websites show she has a very broad personality, see links below.

Athena is an armed warrior goddess, and appears in Greek mythology as a helper of many heroes, including Heracles, Jason, and Odysseus. She was a Goddess of civilization, weaving, crafts and war......but most of all Wisdom.
she was a trickster, after her mother.

As she is the goddess of hunting I would suggest a fierce, warlike personality to those she does not closely relate to.
