Because we CAN. Switzerland and Canada were forged by several cultures at the same time, and that is why they are Multi-lingual. The English culture is responsible for the size and scope of this nation. If the country was build on the English language why should we now change the language to accommodate those who are either here illegally, or those who "had the border cross them" 4 generations ago and have still refused to take on our language.
If you want to embrace your heritage within the borders of the US, by all means have fun, but do not expect me and mine to change our ways to make you feel better while you try to turn our country into your country, and if Mexico is so great why didn't you stay there in the first place.
