OK, to take this out of the war between men and women category -- anybody can say something that is misunderstood by other people.
Now, to put it right back -- men seem to interpret things in a sexual manner, and are more likely to see "yes!" rather than a "maybe." For men, sex is pretty straightforward, and should be a "yes" or "no" answer. For women, sex is incredibly complicated -- just getting to the happy O, for example, is twice as difficult. And, even if she makes the man use a condom (or uses other protection), there's still a chance of getting pregnant and changing/ruining her entire life. So, 15 minutes of passion for a guy is about 15 minutes of passion and 65 years of consequences for a woman. Not fair, and guys should think about that too -- but that's the way it is today.
As for men looking at everything sexually -- some guy here was asking why women never wore bras -- he seemed to take it as an invitation to, um, nibble on nipples. But there are a lot of non-sexual reasons for a woman not to wear a bra -- as well as many bras these days are too thin to cover everything. That kind of question seems to come mostly from men. You hardly ever see women asking "Why don't men wear jock straps and panty liners when they know they are going to become aroused on a date?"
So yes -- what girls say may be completely innocent, but some guy with a dirty mind can interpret something else. OTOH, sometimes they are saying EXACTLY what you are thinking, in which case you are a very lucky man and you should treat her like a goddess.

Yes, I have said things many times and had my partner interpret them in a completely different way and vice versa.

Normally, yes.
Everything is open to interpretation when we men are dealing with women as they tend to be emotion based and we tend to be logic based.
The words: "yes, I'd love to have dinner and then sex with you" probably mean something entirely different to her than to him.

Some strange differences I've noticed : scroll down on a computer
Man - look down the page
Woman - move the page down (opposite way)
Bring forward/put back
Man - do sooner/ do later
Woman opposite, and we can't convince the other s/he is wrong

Most guys don't care what women say. I try to listen and be nice because I want women to do the same to me.

most of the time, YES. this is because men refuse to understand, or too daft to read between the lines.
