assuming those are absolute value bars, the answer is to make it an negative and a positive

so starting with the negative

-(x-5) > 29
-x + 5 > 29
-x > 24
x < -24 (changes to less than because of multiplying both sides by -1)

and the positive

x-5 > 29
x > 34
