Today you have to protect every last item. Some jerk will gladly blast through a locked door or window just for a package of cigarettes. Bars slow them down. The idea is a quick smash and dash so any obstruction that slows them down in being incorporated into store security.
Door and window bars show up after a store has been it a few times.

never seena store with bars in them....where do you live?
My guess is they want to keep out firemen from coming in the store at night...

It's to provide "security" namly not to protect, but to make it look like it protects so they can get cheaper insurance rates
