Above .500 means the team has one win - or more - than losses which is called the winning percentage. The formula is to take the amount of wins and divide that by the total of games played. Overtime losses and regular losses don't matter when calculating the winning percentage.
The phrase "above .500" basically means playing winning hockey, or any sport for that matter. I've used it in business to describe how I'm working, and in social circles when I'm asked how I'm feeling.
As for the plus/minus rating, that has to do with how many goals are scored while a player is on the ice. If the players team scores while he is on the ice, he gets a minus (-), and when the opponent scores while he is on the ice, he gets a plus (+). It's meant to indicate how effective players are.

A player gets a +1 when he's on the ice for one of his team's goals. A player gets a -1 when's he's on the ice when his team is scored against.

For a team to play above 500 means that they have a wining record. It is their wining percentage. For a player to be positive in points means that his team has scored more goals when he was on the ice. If the number is negative it means his team has given up more goals when he is on the ice.

players get a plus/minus rating. Every time they are on the ice and their team scores a goal they get a + when they are on the ice and they get scored against they get a -. Exceptions are no - when scored against on the PK but you do get one if you score shorthanded. Doesn't apply to goalies.
500 is simply if you are winning more than 50% of your games. If you are playing above 500 you are winning at least 50% of the time. If you had played 3 games and won 2 you'd be above 500

1. for a hockey team to be "above .500" they have to have more wins than losses.
2. each time a player is on the ice and his/her team scores, you get a positive rating, each time a player is on the ice and his team is scored against, you get a negative rating.

Win they win more then they lose example 52-50 and when they are 51-51 they are 500
The plus minus system is rewarded to player that is on the ice when a goal is scored and a minus if they allow the goal except for when they are on a penalty kill just the player in the penalty box gets a minus.
