Before I got this job, my supervisors told me I'd be doing administrative work.

At my job so far, I had to copy a book. Then, I was given literally 100 pages of people to look up in their computer and copy down the peoples' health insurance information.

Would I be an administrative assistant? If not, what would I be?

Please don't tell me that my job is called "shіtty" or "boring" or anything along the lines of that because I know and needn't be told twice =(

Admin assistant is general catch all title when doing general clerk work all the way up to being the presidents assistant.

If you expected more challenging work, tell the boss. It sounds like a general clerk
