They sometimes prefer the pots to the litter box so I put screen wire in the pot so they can't dig and there is no reason to go in. I'm sure you don't have screen wire kicking around so if you can use your imagination, you should be able to come up with something.

chicken wire! you can buy it in fairly small rolls at a hardware store, and some might even have large rolls in stock so they sell it by the foot. just lay it on top of the soil around the plant. cut it larger than the pot by an inch or so, and bend it down like a staple to stick into the soil near the edge.
this works outdoors, also, in flower beds. it barely shows if you scatter a little dirt over the top, but not enough for the cats to enjoy.

you can stick toothpicks 3/4 the way into the dirt till they learn to stay away. it just pricks, won't do any harm.
you can get these big rolls of double sided tape from a pet supply store to lay in the dirt, they don't like their paws sticky
try some pet-away spray
hang your plants

randomly place some mothballs in the soil. Cats find the smell too strong for their sensitive noses.

My friend uses vingear on her furniture, a light spray of it and they avoid that smell. I don't know if it will hurt plants or not but you might experiment with it.

You can squirt them with water every time they go for it. Put it up high where they can not get to it. Cats love the greenery.
