I've been looking at a lot of celebrity pictures of when they were young and old. Now that they are older 40's their top of their heads (near the temples) looks more filled in and larger, why?

I think you are mistaking the fact that the ears and nose keep growing as we age. (Slowly, but still grow.) The skull pretty well much is as big as it's gonna get when you hit your mid teens. The other thing is, they have to put the meat someplace when they do plastic surgery! Of course, there are always exceptions. I got a much bigger raise than expected one year at work, and my head got really big. (At least, so my co-workers told me. I did not notice the difference. In size, anyway!)

No, it is only when we are first born that there are suture lines (something like seam lines) in our skulls that mend together. In a newborn they are often called "soft spots". The bone in those suture lines are still soft and will harden soon after birth. It gives room for the brain to completely develop.
Looking at celeb's pictures?... they are getting older, getting balder, have had hair transplants, etc.
