what I heard is I have to wait until after the first service. Why is that? and what happens if I didn't??

Well depending on the car, there is a device called a govenor. This device keep you from over reving the engine.
Most cars are set to run a little on the rich side untill the breakin of the engine. After this first service, it is retuined and this govoner is reset ot removed.
It also keep you from blowing the engine from overing it.

its best to vary the rpm and speeds so the engine breaks in evenly,some cars like higher rpm breakins and some dont,there is a rev limiter built into the computer of all new cars to prevent overspeed,usually about 140 km / hr range

The tolerances in the engine are too tight for high speed driving when it's brand new. You have to break it in first. If you screw the engine up by not following break in procedures, say bye bye to the warranty.
