In Outlook? Outlook Express? Webmail?
In Outlook (and I'm assuming it is the same for Outlook Express), all you need to do is right-click the email, then click Options. There is a field called "Internet Headers" at the bottom of the dialouge box that says something like this:
Return-path:
Received: from ms-mta-02-eri0 (ms-mta-02-qfe1 [10.10.5.71])
And has more information below it.

You ask the sender !!!!!
The IP address is Static and Dynamic.
If Dynamic the IP address will change for each email
you receive.. Only the ISP details will be constant.
Or if the sender sends the mail through a proxy server
you may not find the IP address of the sender.
What is your need for knowing the IP address ?

Go to email Setting menu
Select Advanced Header and Footer
You will get all details of emails sent from.

in yahoo, full header gives ip of the sending server used by yahoo and not the actual user

Try to view the full header of the email and look for the line with "Received:" text, the last one.
Received: from 66.163.187.181 (HELO n14b.bullet.sc5.yahoo.com) (66.163.187.181)
