corn starch and water is known as a slurry. used to thicken. you can use flour but it will cloud what ever you are thickenin. you can also use arrow root. if you are making a soup you can make a roux which is equal parts butter and flour ( by weight not volume) cook untill it becomes a paste. add hot roux to a cold liquid and bring to boil or add hot liquid to a cold roux. if both roux and liquid are hot then mix roux with cold water or milk depending on what you are making just enought to liquify the roux. you can also use an egg yolk called a liason (lee-ay-zon) but once again it all depends on what you are thickening. if i had more info i could help you more. yes i am a professional cook. culinary school, been in the industry for about a decade... yeah. good luck with that. i wish i could help more but not enough info.

Cornstarch is commonly used as a thickening agent as you already know.

Flour will thicken liquids as well, however depending what you're using it on, it may not be your best bet.
