In Retail, it is Point of Purchase, and mostly it refers to the advertising material that surrounds the cash register or special displays in a store.

In the company i work for it means all the advertising that goes up and around instore, like posters.
If i took a guess at what POP stood for i would say Promotional Offer Poster.

Proof of purchase is correct. This is usually the UPC code on the box...the number with all the lines above it that the cashier scans. It might also include the receipt.
