what is the easiest way to take off all 4 carbs to get rebuilt.

--Remove fuel tank
--Drain all 4 float bowls - either into a container or onto a rag.
--Loosen lock nuts on throttle cables
--Manifolds between carbs & engine - loosen screws all the way without removing them.
--Manifolds between carbs & air box - the spiral springs, pull them to the air box.
--Spray the outsides of all 8 manifolds with wd-40 (you want them to be very slippery).
--Bend the carbs up and down (to work them loose of the engine manifolds) and pull them off.
--Lift the carbs up a little to dislodge them from the air box manifolds.
--Pull them sideways off the bike (the wd-40 helped, didn't it?)
--Then remove the cables from the carbs.

Guardrail is right, i would add this caution though be very care full not to damage the throttle rod linkage that run between the carbs, also loosen or remove all the airbox bolts, this will allow you more room, slide them out the right side of the bike.(Getting them off is the easy part, getting them on again is another story) If you have an dry rot on the carb holder boots or the airbox boots replace them all, if you cant do that, use a heat gun to warm up the boots when you reinstall them. Its a good idea to make sure they don't leak do "a wet test" few things are more aggravating than having to take them back off because one just wont stop leaking. good luck
