This is the best definition that I have seen:
Political Correctness: A doctrine fostered by a delusional, illogical liberal minority, and rabidly promoted by an unscrupulous mainstream media, which holds forth the proposition that it is entirely possible to pick up a turd by the clean end.

I am a Liberal, but the political correctness has truly gotten out of hand, it is to the point now where it actually infringes on freedom of speech, and that is what we are all about defending!

According to Wikipedia, the "term again became popular in the early 1990s as part of a CONSERVATIVE challenge to curriculum and teaching methods on college campuses."

And, "Some left-wing authors have argued that political correctness is a straw man, meant to discredit what they consider progressive social change, especially around issues of race and gender."

Meanwhile, neo-con propaganda spews out disingenuous biggotry-in-disguise like "family values" and presents it as politically correct. How ironic.

You are reading a biased definition. That does not even describe it well.
I'm sure it wouldn't be hard to find an appropiate definition.

political correctness is a perception of reality and when you use childlike behavior no one will respect what you perceive
