how do screws come loose from light switch covers all by themselves?

Most people will strike the light switch cover when they turn on or off the light....especially when they do it in a hurry. This causes the cover to move slightly and over time the screws will come loose.
IMHO

The light swich behind the cover is improperly adjusted, you can repair this yourself if your careful not to touch the side of the switch.

maybe it did'nt fit in the first place. You might need a molly screw, You have to put a little peg in first and then the screw will fit tight.

could be a ghost, i heard they mess with electrical things

If it bothers you, you could put tiny lock washer on with the screw
that should slow down a ghost any way

Temperature and humidity changes will cause some walls to contract and expand, also from normal operation.
