What ever tower you are getting signal from knows the time in each zone, The GPS in your phone will tell the signal where you are and it will know to change the digital clock. It might not always be exactly on the line because of tower placement.

When I flew from the UK to the States I had to reset my cell. Maybe some phones reset by themselves, but ive never had one of those.
